Wyman’s Mercantile is now open, bringing new life to the former Choice Market space with a mix of local flavor and everyday essentials.
The store sits just steps from the Carla Madison Rec Center, and with the 7-Eleven at Colfax and York closed, it’s an ideal pre- or post-gym stop. Current hours are 8 AM – 9 PM daily, with extended hours planned soon.
The 2,300-square-foot store offers drinks and snacks, including locally sourced favorites like Hinman’s cherry pie and their popular chicken salad.
The made-to-order counter is also being reactivated through a sublease with Renegade Burrito, a Denver-area burrito spot with multiple locations.
Outside, customers will find four gas pumps and two EV charging stations, making Wyman’s one of the most versatile stops on the corridor.
We were frequent visitors of the former Choice store, so it’s exciting to see new life and a committed team working to sustain this location. General Manager Sarah Dolfi, who previously oversaw operations at Choice, now leads Wyman’s day-to-day with an energized staff and a renewed focus on the neighborhood.
East High students are expected to flood in once Renegade Burritos begins serving made-to-order meals, and a future BRT stop planned right out front, Wyman’s is positioned to capture steady traffic.
With Sarah and her team keeping the doors open and transit improvements on the horizon, the store has all the makings of a Colfax staple for years to come.
To celebrate, a Grand Opening Party is set for Saturday, October 11, from 10 AM to 6 PM. Visitors can expect local vendors, samples, raffle prizes, music, kid-friendly activities, and even a special visit from Pablo Picasso the Alpaca and friends (1–3 PM).

After investing over $100,000 in maintenance and navigating months of city permitting, the company sees Wyman’s as a way to preserve momentum on Colfax. By reopening this corner, they are choosing community over vacancy and helping anchor the corridor for years to come.
