3900 Elati Street
Maíz has quickly become one of Denver’s most recognized food spots, but its story started with a single food truck and a major leap of faith.
Owner Maria Rangel launched Maíz in May 2021 after leaving a career in EMS to pursue something of her own. The business was funded in part by cashing out her 401k, turning a personal risk into a concept centered around family recipes and traditional Mexican cooking.
At the core of Maíz is the gordita, inspired by recipes from Chihuahua, Mexico. Made with fresh masa and traditionally fried, it became the identity of the brand early on. From there, the menu expanded to include tacos and other staples, all built around simple, well executed flavors.
The concept quickly gained traction across Denver, building a loyal following through pop ups and food truck stops. That momentum led to recognition, including Westword’s Best Food Truck, and eventually a transition into a brick and mortar location in 2025.
Today, Maíz operates out of 3900 Elati Street, located on the ground floor of the Assembly Student Living building in Globeville. The property itself is a large student housing community with hundreds of units, placing Maíz directly within a built-in customer base.
The location also sits at the southern edge of Globeville, one of Denver’s oldest industrial neighborhoods that is now in the early stages of a major transformation. Just blocks away, the Fox Park redevelopment at Fox and 44th, anchored by the former Denver Post site, is currently bringing a significant new mixed-use development to the area.
That investment has already started to spur surrounding multifamily and retail development, and the momentum is expected to continue. In the coming years, more residents will be living in close proximity to Maíz, creating a growing, built-in customer base that positions the concept well for long-term success.
After visiting, it is easy to see why the concept resonates. The gorditas and tacos are A+, delivering bold flavor without overcomplication and staying true to the roots of the concept. Maíz has remained focused on accessibility throughout its growth, both in price and experience, which continues to set it apart in Denver’s food scene.
More recently, the brand found itself part of a broader conversation following the announcement of Maize, now Fonda Maize, a separate tasting menu concept from chef Johnny Curiel. While the two operate in entirely different formats, the overlap in naming brought additional attention to Maíz and its role as a locally built brand.
In many ways, that attention reinforces what Maíz has already established. It is a Denver grown concept that scaled from a single food truck into a permanent presence, built on consistency, quality, and community support, and now positioned in one of the city’s fastest evolving neighborhoods.
