Soda Club opens today inside The Ramble Hotel, taking over the space that Super Mega Bien vacated after eight years. The pasta and natural wine bar, recognized by the Michelin Bib Gourmand, comes from New York restaurateur Ravi Derossi and wine director Drew Brady. They launched the concept in Manhattan’s East Village in 2021 under their all-vegan hospitality group, Overthrow Hospitality, and have earned Bib Gourmand recognition from Michelin every year since.
Derossi, who grew up in Colorado, already operates the Death & Co cocktail bar in The Ramble’s lobby. Soda Club gives him a second concept in the same building, but it quietly steps away from the plant-based identity that defines the New York original. The Denver menu introduces a Sicilian-rooted repertoire under Executive Chef Amira Gharib, with dishes like a feta-topped watercress salad and marsala sabayon tiramisu. Denver chef Jon Robbins, who closed his Park Hill restaurant Bistro Barbès this June after a twelve-year run, joins as chef de cuisine.
A tasting of Brady’s rosé list illustrates his idea of wine meant for discovery. One example is a more structured Lebanese rosé from a historically Christian wine region placed alongside a lighter, effervescent Spanish bottle made by a husband-and-wife team. Each selection feels both new and approachable, making them easy to order with confidence.
The refreshed space features a 70-seat dining room and a 30-seat patio. It replaces a restaurant that closed in March because of rising costs, leaving Derossi’s team as the sole food and beverage operator at The Ramble.
Soda Club serves dinner nightly from 5 p.m. to 11 p.m., staying open until midnight on Friday and Saturday. Pasta-making classes and a chef’s counter omakase experience are planned for the coming months.
