The Chicago-style hot dog chain Portillo’s is coming to Colorado, and Littleton is locked in.
A 6,250-square-foot restaurant is planned for the corner of W. Mineral Ave & S. Elati St, featuring dual drive-thru lanes, a 500-sq-ft patio, and seating for 128 inside and 38 outside.
The new location will sit on 2.13 acres at the entrance of Mineral Place, a massive redevelopment of the former Lumen Technologies campus just east of C-470.
The Portillo’s buildout is part of a 45-acre project led by RIG Mineral, LLC, which also includes a Costco with gas station, a large home improvement retailer, and 10 additional retail pads. Over 98 on-site parking spaces and 24 drive-thru stacking spots .
Portillo’s is one of the first major tenants to formally submit plans, but not the only one circling Colorado.
The brand has also proposed restaurants in Denver and Thornton, with ambitions to grow to 800 locations nationwide.
Littleton’s version, built with the chain’s newest “Restaurant of the Future” prototype, will deliver the full lineup: hot dogs dragged through the garden, dipped Italian beef, burgers, salads, shakes, and of course, that famous chocolate cake.
Construction at Mineral Place is underway. Expect openings in 2026.
