Olive & Finch opens its fifth Denver location on Saturday, April 25 on the ground floor of the new 420-unit Dryden luxury high-rise in the Golden Triangle.

At 4,300 square feet, it is the largest Olive & Finch yet, and it marks Chef Mary Nguyen's deepest bet on the neighborhood.

The pick isn't surprising. Nguyen has been vocal that residential density is what keeps restaurants alive in today's margin-crushed environment — and the Dryden delivers 420 units of built-in traffic directly overhead.

The space leans neighborhood sanctuary: a 14-seat bar, a lounge, community tables, a self-serve pastry case, and expansive windows pulling in Colorado sun. A sidewalk patio handles overflow.

The Golden Triangle debut also introduces a new dinner menu built around shareable plates. Highlights include tuna tartare with house-made potato chips ($17), a New York strip with chimichurri ($32), barramundi Provençale ($22), and chicken schnitzel with black garlic aioli ($17). Most entrees land under $20 — a deliberate choice from Nguyen, who has said she wants scratch-made food to stay accessible.

A Denver native, Nguyen founded Olive & Finch in 2013. The collective now includes five Olive & Finch locations (Uptown, Cherry Creek, Union Station, Arts Complex, and Golden Triangle), Little Finch cafés, Olive & Finch on the Fly microstores, and a food production and hospitality consulting arm.

Grand opening weekend runs April 25-26. Saturday features DJ Sugabear Harris from 3-7 p.m., a live painting activation by artist Tatiana Cullen, and a 5 p.m. bubbles toast from Nguyen. Sunday brings DJ MnM spinning old-school hip hop from 11 a.m. to 3 p.m., a 1 p.m. mimosa toast, and more live painting.

The timing is sharp beyond the restaurant itself. Opening weekend lines up with the Denver Spring Market, which kicks off a short walk away at the historic Sports Castle at 1000 Broadway — making brunch or happy hour at Olive & Finch an easy pairing with a market run.

Olive & Finch Golden Triangle is open daily 7 a.m. to 9 p.m.
