Neighborhood Brewing Vibe Briar Patch Revitalizing Congress Park

Another neighborhood favorite is out, but a new one is on the way.

Kent Dawson, co-owner of Briar Common Brewery and Eatery in Jefferson Park, is taking over the former Crepes ‘n Crepes with his new concept called, Briar Patch.

Briar Patch, will be a 2400 square foot restaurant serving beer exclusively from Briar Common, with an anticipated open date later this year. Dawson describes it as similar but different from Briar Common.

It will serve the same beer, and have the same neighborhood vibe, but with a distinct menu. Expect pub staples like burgers and fries, plus buffalo cauliflower and poke salad. No grilled octopus or beef tartare this time around.

He admits Briar Common leaned too foodie at first, but now they are playing the hits with fruit forward beers and approachable food.

Beer is not the main focus either, it makes up just 20% of sales at Briar Common.

Dawson says this will be a casual neighborhood spot that runs lean and efficiently. His brother Greg, who co-founded Briar Common, will not be involved in this one.

Crepes ‘n Crepes closed last summer after over a decade in business. City Street Investors, the local landlord behind the project, says Dawson stood out because he is a local operator with roots in Denver.

Even with rising costs and minimum wage pressure, Dawson is optimistic. With dual operations now, he hopes to benefit from vendor discounts, shared staff, and brand recognition.
