Ash and Agave has officially opened in Cherry Creek, taking over the former California Pizza Kitchen space with a new concept centered on coastal Mexican cuisine and immersive design.
The restaurant, developed by Shucking Good Hospitality and founder Sean Huggard, opened April 5 and brings a Mexican Riviera inspired experience to one of Denver’s most active retail and dining districts. The space is designed to feel transportive, blending tropical greenery, woven lighting, and warm finishes to create a setting that shifts from bright daytime energy to a golden evening ambiance.
“Ash and Agave was designed to give a feeling from the moment guests walk through the door,” said Huggard. “We wanted a space where the lighting, music, cocktails, and food all work together to create something transportive. It is lively, warm, and built for connection.”
The menu is built around wood fired cooking and shareable plates. Standout offerings include seafood driven dishes like sea bass ceviche, Baja style mussels, and chargrilled octopus, alongside items such as queso fundido and al pastor skewers. A key feature is the Carne Locker, which showcases premium cuts prepared over a 900 degree fire, including ribeye, lamb rack, and a 24 ounce porterhouse designed for sharing.
Ash and Agave also leans heavily into its beverage program, with a focus on tequila, mezcal, and agave forward cocktails. Signature drinks include the Paloma Negra and Piña Brava, while curated agave flights highlight a range of regional expressions. Non alcoholic options include aguas frescas and Mexican sodas.
Seafood is sourced directly from the group’s Blue Island Oyster Farm in Long Island, a supply chain advantage that sets the concept apart in Denver’s dining scene.
Ash and Agave represents the latest expansion from Shucking Good Hospitality, the team behind Blue Island Oyster Bar and Oliver’s Italian. The opening signals a continued push toward experience driven dining, positioning the concept as both a restaurant and nightlife destination within Cherry Creek.
