Michelin starred chef Johnny Curiel is preparing to open his sixth restaurant in the Denver metro area, introducing an intimate tasting menu concept to RiNo in spring 2026.
Curiel and his wife and business partner Kasie Curiel will open Maize at 3455 Ringsby Court inside the TAXI development. The restaurant will seat 8 guests at a time and offer 2 seatings per night. Maize will be Curiel’s first tasting menu restaurant and will feature an 18 course traditional Mexican menu centered on in house nixtamalized masa, with Curiel closely involved in guiding diners through the experience.
The restaurant will be located within TAXI, a mixed use campus developed by Zeppelin Development and designed by David Baker Architects. The site was formerly home to the Yellow Cab Depot and was redeveloped from a remediated brownfield into a growing RiNo hub for light industrial, office, residential, and live work spaces. Today, the campus includes 9 buildings, more than 110 businesses, and over 100 full time residents.
The opening of Maize continues a rapid expansion for Fonda Fina Hospitality, which has grown across Denver and Boulder over the past 2 years with multiple Michelin recognized concepts. Maize is expected to open in spring 2026.
