Historic Denver Hotel Revamps Dining with Le Palais Frites Launch

One of Denver’s most historic hotels is revamping its approach to fine dining, and it starts with fries.

The Brown Palace Hotel, which has anchored downtown since 1892, has officially opened Le Palais Frites, a new French eatery inside the former Palace Arms space.

The upscale restaurant, which closed temporarily in May, has now been reimagined by new management group Highgate Hotels. They say this is just the first step in a larger refresh of the Brown’s food and beverage offerings.

Led by Executive Chef Adrian Carson and Regional VP David Varley, Le Palais Frites features a seasonal three-course prix fixe menu for $49. That includes a Gotham Greens Market Salad, your choice of flatiron steak, garlic-roasted half chicken, or portobello mushrooms with duck fat fries, and a classic Napoleon for dessert.

Guests can also upgrade with oysters, lobster, or a New York Strip, along with French wine pairings and handcrafted cocktails. The Napoleonic decor, red leather booths, and chandelier-lit dining room preserve the space’s long legacy while the new menu brings fresh energy to the table.
